what techniques do you guys use to work out what extended response questions may be in exams?

Is it the case of the part of the chapter with the most info??

Personally, I think attempting to figure out the extended response question is pointless. Especially when you're prediction is more likely going to be wrong. I mean, you could spend that time actually studying everything in detail.

But, to answer your question... sometimes looking at past papers and figuring out what has and hasn't been asked is a good start. I think popular areas of the syllabus asked for extended response are things like 'discuss', 'analyse' and 'explain'.

no point trying to find the answer, just know your text and think of narrative techniques/quotes which you can adapt

It depends on what subject you are talking about, but in general, at least for science subjects, you look at the syllabus and look for dotpoints that have words like assess, discuss, evaluate-the deeper critical thinking verbs-usually these will indicate to you that they might be a part of an extended response.
