I have two different textbooks, one of which says:
metal +water = metal oxide + hydrogen
the other says:
metal + water = metal hydroxide + hydrogen

Are both reactions possible? If so, how do you tell whether an oxide or hydroxide is formed?

Yes both are possible reactions. Certain metals can react with water (in the form of steam) and produce oxides.
Generally speaking though, the reaction of an active metal and water is:

active metal + water --> metal hydroxide + hydrogen gas

There is a list of metals activity in the prelim course, metals...from that table u can determine what produces what...

metals that react more easily (that only require cold water), K, Na, LI, Ba, Ca produce hydroxides, & the ones that need the presence of heat (ie steam) scuch as Mg, Al, Zn, Fe produce oxides.>!!
