There are some interesting things going on in there.

Like Literary Studies, English and Creative Arts which I want to do in the near future - 2007 or 2008.

Which is five years longer than I'd normally do it.

And also there's publishing and editing, which I do have some experience.

What is the most practical way to transfer from a Diploma of Arts to a BA in any of the departments?

And how do I choose the best second and third year courses for me? There's so much choice.

Is Shakespeare compulsory? And what about the other first year courses?

I really don't have any answers to your other questions, however:

As for picking 2nd and 3rd year subjects, just pick whatever takes your fancy.

Shakespeare is definitely not compulsory.

Just as a side note: I thought the English dept at Melbourne was pretty awful. It might be better now, but when I finished my Eng. major a few years ago it was in a bad way.
