If there did exist a substance called 2Na(OH)_2, then that would imply that the valency of Na is +2, not to mention the fact that we just made an OH- out of nowhere.

This. NaOH is correct, not Na(OH)2

Na has a charge of +1 and OH has a charge of -1. Only possible compound is NaOH.
