Hey,
If I accept an early offer, am I required to enroll straight away?

They usually have a set time you must accept the offer and enrol in your course. For UWS, they give you 14 days to accept the offer and enrol I believe. You're gonna have to ask them.

Basically accepting the offer and then enrolling in your units of study are two tasks the university expects you to do at (almost) the same time. See http://sydney.edu.au/future-students/start/accept-enrol/accept-offer-and-enrol.shtml

You can then change your units later until uni starts at beginning of March.

How would i unenroll if i receive another offer in the main round?
