Anyone know what a 5.0/7 GPA would convert to in terms of UAC selection rank.

Essentially, the problem is that the conversion from GPA to ATAR/selection rank is a bit ambiguous. There does not seem to be a document or source that entails a universal system of conversion, rather it appears that each university may choose to perform the conversion differently. For instance, the University of Queensland mentions that, if a student has studied for at least a full-time year, a GPA of 5 would be converted to a selection rank of 96. They also state, in a comparison that the university establishes, that all other universities also convert a GPA of 5 to a selection rank of 96. You can access the document and have a look at the comparison on page 2 of the document using the following link:

At the same time, UAC appears to have its own conversion figures. For example, it mentions that a GPA of 5 could be converted to a selection rank of 88.30 if a student studied anywhere between 1 year and 3 years full-time, and to a selection rank of 92.60 if the student completed 3 years or more of full-time study. As you can see, there is a considerable difference between the two sources, making this matter more complex to address. You can access the document containing this information (on pages 114, 115 and 116), using the link below:

I hope this helps! :D
