I wouldnt risk it. I prepared two, but knew one of them stronger than the other.

Also did this. Additionally, doing so means that you can pick the more "apt" text for the question if you're only required to have one. The more options, the better.

For my finals, I actually had 3 supplementary texts for each module - 2 primary ones, and 1 secondary one just in case (the secondaries were all primaries for other modules, in order to avoid additional effort).

Covering your ass is a skill that has lifetime relevance.

I had prepared for five speeches in mod B, only memorised two and winged it the HSC. thankfully they didnt specify.

There really is no definitive answer to this question, it really depends on the school and the examiners who are setting the exam...

You should always have two sup texts. Know one more than the other. If you learn one in class than one outside class make your stronger one the one you learnt outside of class by yourself as you will stand out more this way.
