I'm currently interested in becoming a meteorologist and I'm wondering what the best (sydney) uni is for it...

I think UoW (Wollongong) and USYD have degrees relating to meteorology (from a quick online search), but I'm not 100% sure on if it entails the field of meteorology itself or not.

Another way to view it is to search the Job-Seeking websites for a meteorologist role, and look at the degree requirements and that can also shed light on what businesses are looking for. You might find it opens doors at other universities.
If there are no local meteorologist jobs, expand the search nation-wide and you should be able to match equivalent degrees with whats offered to you locally.
