I was just wondering people with previous experiences and there ability to estimate my atar!!

Standard English - 1/55
General Mathematics - 2/41
Business Studies 1/11
Business Services - 1/4
PDHPE - 5/22

& My School Ranking is 321

I reakon 83+. Since your topping most of your subjects, its hard to predict your ATAR, as your performance on your externals will largely determine your result. Potentially, you could get 83 or 93, its just too hard too tell.

I usually don't do estimates for languages or niche subjects... like Business Services because I'm not sure about them. Here, the situation is easy though.

85+, depending on how well you go in the HSC itself. As you have top ranks in most of your subjects, any ATAR is available to you right now - depending on how well you go in externals.
