Despite many years of tertiary level education, I am still dreadfully disorganised and struggle to manage my subjects, what I should be doing when, and getting everything prioritised and written on time.

I am very motivated, and want to learn how to succeed at tertiary education. I was talking to some dude who suggested some students who really struggle, use a strategy of treating uni as a full time job i.e. arrive at 9 in the morning, leave at 5 in the arvo, work all the way through the day, which was quite a radical idea to me, and something I'd like to try next year.

That's the sort of advice I'm looking for.

Can anyone recommend a text to learn tertiary study skills?

I found this on google though it's more about discovering your learning style than actual tips. Still, might be an alright starting point.

Other than that, do a search on Newcat, even if you just write 'tertiary study'. There's a few there that might be useful and some are online resources.
