what is the purpose of monitoring mass chanes during the fermentation?

correct me someone if I am wrong, but wouldnt the monitoring of mass changes check to see the mass of CO2(g) that is being released? hence you usually put the tube leading from the fermentation flask into a flask with limewater which turns a milky white with the addition of Carbon Dioxide.
