Here is the info on buses to Randwick Racecourse:

Catch the 339, 372, 374, 376 from stand C in Eddy Avenue

OR

373 from Circular Quay, via Elizabeth St. and Taylors Square

(get off at the first stop on Alison Road at Doncaster Ave).

You can also get the 374 and 376 from Circular Quay, St James, and Museum stations (if you want to beat the queues at Central)

You can also drive. The racecourse has plenty of parking!
