The question says:

"Write a story that highlights a character's response to a Journey."

How exactly would I go about writing a story about this? What would a characters response entail? Would it be re-telling an imaginative journey?

I'm guessing how that Imaginative Journey affected their life. Like what they learn't about themselves. How willing they were to go on this journey if they had a choice, what they thought of it afterwards etc.

Not sure thats the right way about it, but I'd do it like that... but then again I suck at english.

Best ask your teacher to explain, it's not like they will tell you: "Don't be stupid, work it out yourself." they are there to help you.
