stupid question... but why do they call it an ID3 tag???

MORE IMPORTANTLY though, wat happens when i go into iTunes, then select 'advance' from the top of the screen and click on 'convert ID3 tag'. what does this do???

ID3.. i'm not sure but i know there's ID3 and ID3v2 (from Winamp)... v2 seems to support longer filenames, chinese/unicode, etc.. But i'm still not sure why they call this metadata "ID3".

As for "convert id3 tag"- it's to fix dodgy unicode and different versions of ID3 tags (v1, v1.xx, etc..)

ID3 is a tagging format for MP3s. It allows metadata such as the title, artist, album, track number, etc., to be added to the MP3 file.
