If I get an offer in the main round, accept it and then enrol, can I get an offer in the late round and withdraw the other one?

Yes, but note that cut offs can increase in later rounds.

okay, so say I got into eng/science - I go to enrolment day, do all the stuff and then I get an offer for eng/med sci I can cancel the other one

Yes.

In fact you are strongly advised to accept and enrol in the course you get in the main round even if waiting for an offer in a later round. If you don't do this and you don't get a later offer you'll be without a place at uni.
