I know UNSW doesn't offer radiology or medical imaging by itself. But is there any other course that may be also cover or is similar to radiology.

Yeah, pretty much this.
It's worth noting that radiology is a medical specialty, i.e. you need a medicine degree and internship, then you can specialise in radiology with the Royal Australian and New Zealand College of Radiologists. The medicine degree part of that path can be done at UNSW.

Radiography is a different course.
