In the standard model

do we talk about Quarks and Leptons or do we need to talk about Quarks, Leptons and Bosons?

well, i wouldnt worry to much about it, i'd jus talk about quarks and leptons, unless the question asked for bosons as well. learn it to be on the safe side

the concepts being the features and components of the standard model - so flavours and particles?

I just want to be sure i'm on the right track.

Dont bother with the flavours - up and down quarks is enough...Just know the main groups and whether or not they exist indepedently

I thought no quarks exist independantly becuase we dont have particle accelerators that powerful yet?
