Ok, so I have two things that could help you guys get a rough estimate as to whether you will be able to attain a band 6 for a particular subject:
1)Brettymaccs raw mark data base (will give you a rough idea of how some subjects align in the HSC):

2)Searchable file of distinguished achiever's (those who attained a band 6 for a particular subject) for 2011 HSC; this may be tedious but it gives you an estimate as to how many people from your school last year attained band 6's for a particular subject, just scroll down until you find your school and count the amount of times the name of the subject of interest appears, this will give you a 'hypothetical range' for band 6's in your cohort:
