No UAI required usually, unless there is some random course I haven't heard about. Of course, a good UAI looks outstanding in an interview, and would all but guarantee you a spot as a trainee chef. Good job to have, if you are passionate. Can be a lot of stress though, especially as a head chef. Some of the nicest people I know are chefs, probably because they're such hard workers, so selfless, and always looking to facilitate the needs and wants of others (not to sound to romantic).
