Hi there are many different ones:

Reset-Set (the one with NOR gates)
Set-Reset (one with NAND gates)
Gated RS
D-type flip flop

Also, for a simple one like set reset, how would u constract a truth table? A bit difficult to explain but for example, if i have gate 1 set to 0 and gate 2 set to 0, then the output of gate 1 would be 1, which means in gate 2, their will be a "0 OR 1" and vice versa. Sort of like stuck in an infinity loop. Hope you understood me, i'll try to create a diagram to better explain it if you dont understand. :)

yes we do need to know the 8 bit one in sam davis.
However Flip flops go into great detail in davis, but we dont need to know them all. The Bos usually only tests reset-set and set reset ones, and they may test the 8 bit one too. We dont need to know about clocks.
Basically know ur gates and the basics behind flip flops.

im not quite sure -x- wat ur saying but

(page 365 sam davis)
input output
S R Q (not)Q
0 0 last Q last (not)Q hold
0 1 0 1 reset
1 0 1 0 set
1 1 X X illegal

remember, u cant reset without having set the flip flop first.
hope this helps
