Does cooking come under lifestyle? It is on the lifestyle channel on pay tv.....
Anyway, what are your best easy and/or cheap meals or snacks? Share for the benefit of uni students and the time-deprived everywhere.
Here are a few of mine:
-Buy lebanese bread or tortillas (you can get them really cheap)... fold them in half and in the middle use lite tasty cheese along with ingredients of your choice (e.g. ham, herbs like basil or garlic, tomato, sweet chili sauce, whatever really). Cook in a pan or on a sandwich grill. Yummy and easy.
-Chicken or Beef Pho (Vietnamese Noodle Soup).... for the chicken one, simply use chicken stock, for the beef one you can buy sachets to make up the soup. Then you just use rice noodles which you cook in boiling water, chicken or beef.... then you can add flavor by using fresh herbs, chili, fish sauce, bean sprouts etc. It's not a traditional version, but it is easy and tastes pretty good.
-Cheap and easy chicken curry- eat this with rice- Take one onion, chop and brown in pan. Add mild indian curry powder (I don't really have any measurements for this recipe, it's all to taste) and a small amount of veg oil. Then add chicken thighs, coat them in the curry/onion and just brown them slightly. Then add lite coconut milk and some chicken stock to the pan (like about 1 cup of each)... you might need to add more curry powder at this point. Also, chop up a tomato and put in. Then put on low heat and simmer for 20-30 mins. Take out the chicken pieces, and then add chopped spinach and fresh coriander in to the sauce in the pan and cook for a few minutes..... then serve and eat. This will make a few serves, so you can stick some in the fridge and heat it up later.
