Is it possible to undertake a joint honours between economics and mathematics/statistics? I know that joint honours between economics and econometrics are possible, though not sure if it is possible to combine honours between cross-faculty disciplines.

Not sure if you'll be awarded joint Honours but if you're undertaking Economics Honours you can take two or three mathematics honours subjects in lieu of economics coursework in fourth year. This is generally what people who are trying to get into competitive PhD programs do. I would speak to the head of Economics Honours for more info, he's very responsive.
