I want to start practicing for my upcoming task 1 exam but the past papers are sorted between 'old' and 'new' (2019 and onwards) syllabus past papers. What are the differences between the two so I can avoid studying something unrelated to the current syllabus?

Start with the new syllabus papers first. Once you've finished those then you can move on to older syllabus papers.

I believe the old syllabus had topics like circular motion and conics, which has been replaced with a heavy focus on vectors.

Old MX1 had circle geometry (now gone), simple harmonic motion (now MX2), projectiles but without vectors, and lacked vectors, slope fields and some parts of DEs. New MX1 also has some curve sketching that was previously MX2.
