All our option topics were predetermined- not that i'm complaining about Industrial Chemistry. I would have chosen Communications > Genetics for biology though... but I dropped so no matter. I don't think you can go wrong with Industrial since I hear Shipwrecks is very very boring.

Apart from dropping you may also choose to pick up an extension course which will count for one extra unit. You have to do a minimum of 10 units for the HSC and so if you have over 10 units, they will take your best 8 units + 2 units of English - which is the "safety net" in which you are able...

I also think you should do both Biology and Chemistry (as I did) and decide later on which you would like to drop.

I investigated the effect of temperature on magnets. I did it the day before, modified my results a little and got a good mark.

I feel stressed now the holidays are ending and i've realised that i've done literally nothing productive and trials are in Week 4.

Why not both?

Personally I coped fine with 13 units during year 11 and I dropped Biology in year 12 and so am doing the HSC with 11 now. I say don't worry about the units and do whatever subjects you enjoy most.
