They use the assessment marks to go towards your HSC mark if you choose not to sit the exam. they don't go towards your UAI though.

what do you mean my "year 11 stuff" ? if you did Core units in year 11, then yeah. all the core units are in it. none of the elective ones. go to the board of studies website and see the past papers..

If you have information on seafood, look at what it is, see WHY prawns are high-risk and the measures that you need to take to ensure their saftey (eg. keeping the prawns chilled until service).. ummm i'm not really sure what else.
