From what l can see, the HACCP controls are how you are going to get the food to your establishment (e.g. delivery and the HACCP controls needed) as well as transporting it from the delivery truck to the cool room.
Here are two topics l have made notes on - "Develop and up to date Hospitality Knowledge" and "Follow Health, Safety and Security Procedures"

On the outside it was all colourful with what we see in the media and on the inside was black and what the truth really is e.g. Blackmail, Bribery etc.
I have to agree, l've been really bitchy, moody and in a foul mood from last Saturday.
