No, what you see is what you get as far as lectures go. Aside from duplicate lectures, where you just pick one, you'll go to what's on the timetable. The only thing is tutorials. Options for times for them may or may not come up, what you'll have to do is sign up for them around the first week...
If you've been told that expressly, then that's what you need to do. As far as I remember, you didn't have to enrol before oweek last year. However, things may have changed due to the new degree structure. If you want to be safe, enrol in Foundations of Law - every law student has to do that...
It depends on the subject. I study arts/law and only one of eight so far has been non-compulsory. Arts subjects usually have less students than law. However, I still think there'll be less than you're used to.

Assuming this is your first sem/first year at uni you'll be doing Torts and Foundations of Law in a law double degree. The other two courses will come from your other degree. There will be an enrollment session during oweek that you can attend if you're still confused.

You can if you apply to multiple states, e.g. VTAC and UAC. Then you get one offer per application, as long as you satisfy the requirements of at least one of your preferences in each application.
