I can't help but feel i'll be missing out on a proper education if all i do is maths/finance type stuff... I mean, i wanna do some humanities too. Now i know you can't combine it with arts (nor would i want to really), but is there any way that this is possible with actuarials at macq?

In short, yes. Do the single degree, and for your very very few electives (which would be when others are doing units for their double degree), you do some Arts units which fit.

I was thinkin' of spending a 5th year, just to broaden my education, until I thought about it again. :p I don't think I could string two sentences together when I finish ACST, so I'll just quit while I'm ahead. ;)

Your welcome. :) Btw, first year offers you no electives and you have a recommended overloaded timetable. :p You will have be able to do two units, in second year - one in each semester, of your own chose (awful grammar, but stuff it!).
