what are the differences between those courses and what uni(s) is/are best at 'providing' them? ..(and which one has the higher pay on ave?)

They are basically the same thing. Best place to do it is at a rural TAFE (make sure you drop out before you get your diploma to ensure best career prospects). After this you go to your local 'provider' for 'jobz'.
