how would an arts degree make you more employable? like say if i do it with engineering, would it just be a waste of time?

Depends what you want to be employed as

You can't become a history teacher with an Engineering degree, for instance

yes that's usually the point of most combined degrees

LOL I know that's why I'm so hesitant about doing it instead of commerce haha
