Laz would be better explaining it, but I think it demonstrates how each course contributed to your UAI. Looking at the Results Profile, it looks like the number (out of 100) comes from doubling the scaled mark from each course (which is out of 50).

I assume the sector of the pie sticking out signifies which course scaled best?

Honky tonk has it right - "it demonstrates how each course contributed to your UAI".

The figure displayed next to each slice is the number of scaled marks which that course contributed to your scaled aggregate (i.e. your UAI), and those figures coincide with the ones listed in the "UAI Contrib." column in the results table. The figures in that column are calculated by simply multiplying the scaled mark for a course (out of 50) by the number of units of that course which counted.

The exploded slice is the one with the largest contribution.
