In the industrial production of ethanol from sugar cane: water and yeast is added to the sugarcane juice to begin the fermentation process --> is this hydrolysis? and is the product of this hydrolysis glucose?

In the conversion of sugar cane the first step is hydrolysis in which the Sugar cane is first grown, cut down and crushed to extract the juices that contain sucrose. Following this an enzyme called sucrase or an acid is used to hydrolyse sucrose into glucose

C12H22O11 (aq) + H2O(l) → 2C6H12O6 (aq)

The fermentation stuff is after that chemical equation occurs
