Yeah, the 4th yr subjects go pretty deep, but for some you don't need to have a very strong maths background, as usually Discrete is good enough.

eg. number theory, combinatorics, geometry, graph theory

If you are doing statistics, yes.

I'm doing MATH2039, Engineering Maths 2B and MATH2839, Stats for us Engos (though I don't think there's any difference between that and MATH2859)

in addition to what i have to do, i was planning to do:

math3041 - modelling
math3161 - optimisation
math3311 - maths computing for finance
math3801 - prob and stat processes

are there any subjects which are essential?

I found MATH3311 to be incredibly retarded.

Also I must be in your 2601 class acmilan since I am enrolled this session in that.
