Does anyone know any good transgenic organisms I can study that have a lot of information on it?

Topical suggestion (since medicine & science seem to all be focused on COVID at the moment): transgenic organisms for research purposes. Transgenic mice are the most common examples, where a specific gene is inserted into each mouse to produce a specific human protein that researchers want to study. The topical example is human ACE2 receptor expression in mice and monkeys, which is the route via which SARS-COV-2 virus infects human cells, so this allows researchers to test potential agents (eg. Hydroxychloroquine) which might stop the virus infecting cells.

Game-changing suggestion: GMO foods. There’s a lot out there which make plants more pest resistant (more yield, more $$), but potentially more useful are the efforts to increase the nutritional value of staple high caloric foods such as rice, for example ‘Golden rice’ which has a gene that promotes synthesis of beta carotenoids (usually found in carrots & pumpkins), so in poor countries, growing these modified rice strains can provide essential nutrients, not just calories.

Bizarre, inventive suggestion: Spider silk in goats milk (You can Google it yourself - IMO, a bit too ‘out there’, but you might find it interesting).
