Generally speaking how possible is it to gain entry into a post-grad medicine degree at uni without a science degree?

It is still very possible if you put in the hard yards.

I have read countless accounts of students from humanities based degrees ace the GAMSAT. They usually self-studied the 3 sciences at home or took up a bridging course or a unit of science in their degree. It should be noted that GAMSAT science difficulty includes 1st year biology and chemistry, and Year 12 (or A-level) Physics.

So just self-study at home for the gamsat should be alright? what about the uni itself, do they accept all applicants from uni degree's equally or?

Yes, they do not discriminate on the basis of your degree. Read around and you'll get an idea.
