i just dun think fried rice, sweet'n'sour pork, lemon chicken, black bean beef should be known as the hallmark of cantonese food - it's bullshit, watered-down, bastardised, tasteless chinese food to 'ngark gwai lo' (my apologies to the non-asians of this thread).
if we have authentic jap/korean/vietnamese/thai food in Australia, why can't we have authentic canto food? every time i eat at a chinese restaurant, i loathe to see the English menu divided into:
ENTREE - mixed entree (what the fuck is mixed entree anyway?), bastardised dimsims
SOUP - long or short soup, sweet corn soup
MAIN COURSE - DUCK, CHICKEN, PORK, BEEF - sweet'n'sour, lemon sauce, black bean
for one thing, chinese people don't have 'courses' at dinner. we chuck everything on the table and just grab what we want into our rice bowls (with good table manners of course).
two, not matter what people think, we eat normal boiled rice more than fried rice.
three, i have no fucking idea what long or short soup is. to me, Chinese soup is less gluggy, more clear ('qin') than non-asian soup. The stock is made by boiling bones and/or meat portions, potato, carrot and other vegies, red dates, sometimes herbs, over a low fire for a ridiculously long period of time until the meat/bones have basically dissolved into the stock and the flavour locked in. however thinks sweet corn soup is Chinese should be knocked on the head - it's made from canned cream corn.
four, bastardised 'cantonese' food you get for $6.50 a serving at marketcity or wherever tastes like absolute shit, like the guy decided to mix in a one-kilo bag of monosodium glutamate or something. it's the pinnacle of revolting, and should be classed as tasteless. it degrades the form and variety of Chinese food in general.
five, we should have more authentic chinese restaurants in sydney, like they do in Ashfield (though they're shang) and Hurtsville.
edit: oh besides the bastardised English menus, i also hate the fact when the English and Chinese menus don't match. that's fucking discrimination - at least give them (non-chinese diners) a choice dammit..
