The 3u book will cover all the 2u topics anyway.
The Year 12 3U book does not cover 2U Trig differentiation/integration/applications, Logarithmic differentiation/integration/applications, Exponential differentiation/integration/applications. Other areas it does not cover are natural growth and decay, applications of Calculus, Trapezoidal, Simpson's Rule just from the top of my head. However the Year 11 3U book does.

Here is my opinion.

- If you have the Year 11 3U book, get the Year 12 3U book ONLY.

- If you have the Year 11 2U book or no Cambridge books, get both books.

I would say both books. For the same reason. Those are pretty much the only books you need. Then you can move on and do some past papers. Unless you are keen, you can also check out Coroneos and Terry Lee Fundamentals.

Year 11 and 12 books are combined. I would say get both of the respective books mentioned above. The reason is, the 3U book will not explain the important 2 unit concepts. After that grab yourself past papers and proceed with them under examination conditions. The reason is because textbooks do not emulate questions given in examinations. If you can view a variety of questions from different past papers, you will see that the amount of questions they can give you are very limited and the more you see, the less you will be caught off-guard. If you do them under examination conditions in the specified time, other than good practice you will need to know where your weaknesses lies and fix them before the actual examination. Hence you will not be as pressured.

I would also suggest getting some past paper books by topic.
