I would say UTS is the leader in (applied) quantitative finance research and teaching in Australia. The postgrad Masters in Quantitative Finance (MQF) comprehensively covers theoretical and applied aspects of financial mathematics (also on programming and risk management). The staff also maintain close links with industry through consultative work. I strongly recommend UTS to any budding quants, quantitative traders, quant developers, etc.
Financial maths at UTS is going to be dead within 5yrs once the sole Fin Maths dude retires.
UNSW Fin Maths is too theoretical. Apart from UTS, I think Melbourne Actuarial would also be good to do a Fin Maths PhD (probably not masters as not close to the action). They have got quite a few well known fin math dudes - mark joshi, daniel dufresne.
