I personally don't see the point in having a safety net if your extra 2 units are extremely time consuming and make you personally unfulfilled. Don't do 12 units because of the at times BS idea of having a "safety net" - is it really safe to be spending a lot of extra time on a subject you know that won't count? Also with one less subject, you have less exams and less subjects to focus on. IMO, the positives of dropping engineering definitely outweigh the negatives. You can also use this extra time gained to work on your other subjects, i.e. math.

my parents will ring the school and ask for results and how i am going in the subject. They also talk to every single teacher at parent teacher interview regardless of whether or not i do it. :(
Just bullshit and say that the school forced you to drop down to 5 subjects for Year 12

If you're in year 12 keep them because you are almost finished. What happens if you drop it and then you get another low mark? This way it won't drag you down.

i'm in year 11 and i'm going to keep it for the safety net as well as the bonus marks at UTS.
