It depends on the ATAR scaling each year but I would probably say Economics would be counted whilst Biology wouldn't, in saying this, there is still the chance that a lower scaling subject e.g. Hospitality wouldn't count.

UNSW is more renowned for it's engineering then USYD. However, both are internationally recognised Go8 Universities, so I don't think either would necessarily disadvantage you employment-wise. I believe that Chemical would have a better employment rate by the way. Good luck!! :)

You could still have a shot, don't give up hope!! They won't look down upon you for not having done the LAT because they don't require you to do the LAT :)
