Does anyone else love it? Funnily enough, I've only listened to the Doctor Who soundtracks (Murray Gold), Battlestar Galactica soundtrack (Bear McCreary) and I really like Hans Zimmer.

Does anyone else like listening to this type of music?

Same! There are some amazing instrumental pieces both from history and more recent ones. I have a love of classical music hehe.

I love Toccata and Fugue in D Minor...

More contemporary however, my favourite is Cumulus by Imogen Heap.

The Battlestar Soundtrack is pretty incredible!

Gaeta's Lament and the version of All Along the Watchtower are also good even though they're not instrumental.

If you like good instrumental music... check out Mahler, Schubert, Schumann, Debussy, Beethoven and Mozart are obvious ones, Mussorgsky, Bartok, Sculthorpe, Shostakovich, Berlioz, Brahms, Poulenc, Rachmaninov, Chopin, Liszt, Saint Saens, Holst, Tchaikovskly, Boulez, Strauss, Stravinsky...

These are composer's you'd probably like if you like these things

Hans Zimmer is amazing.
John Williams is as well.
The the Lord of the Rings soundtracks by Howard Shore.

I also love Yann Tiersen, Felix Mendelssohn, Beethoven, Mozart and Debussy.
Jamiroquai have some pretty cool instrumental tracks as well.

Oh yes! How could I forget John Williams :p

And I keep on listening to Kara's Coordinates by Bear McCreary from BSG. Epic.music!

Oh, and I finally found 'O Verona' from Baz Luhrmann's (sp?) Romeo + Juliet. :D
'Unstoppable' by E.S. Posthumus is a good one to check out if you like that [heavy?] sounding classical music.

And Apocalyptica is worth a mention too.

One of my roommates has a collection of music from Super Smash Bros Brawl performed by an orchestra. So amazing!

Nujabes has really good chill instrumental songs.

But I'll look them up on youtube. :)

No idea!
Oh and I have to say that I only recently started watching Doctor Who on ABC2 (I'm pretty sure the first episode I watched was the one where he meets Martha) but I really do like the soundtracks just as much as the show :D
Murray Gold is the shiznit. The 3rd Season soundtrack is the best, imo (actually, its the best season from the new series imo).
